Black Bean Soup

In a food processor or blender add:

1 can black beans, drained
1-1/2 cups broth, any kind
1 cup of salsa
A few squirts of lime juice
dash of cumin powder.

Blend until smooth.

Transfer to dish/pot. Add another can of drained black beans. Cook until heated.

Excellent with quesadillas.

Salmon Macaroni Bake

INGREDIENTS
1 (14 ounce) package deluxe macaroni and cheese dinner mix
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
1/2 cup milk
1 (6 ounce) can skinless boneless salmon, drained
1 tablespoon grated onion
1/2 cup shredded Cheddar cheese
1/2 cup dry bread crumbs
2 tablespoons butter or margarine, cubed


DIRECTIONS
Prepare macaroni and cheese according to package directions. Stir in the soup, milk, salmon, onion and cheddar cheese. Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with bread crumbs; dot with butter.
Bake, uncovered, at 375 degrees for 30 minutes or until heated through.

Pumpkin Roll

Pumpkin Roll

INGREDIENTS
3 eggs
1 cup white sugar
2/3 cup canned pumpkin
3/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
confectioners' sugar for dusting
1 cup confectioners' sugar
3/4 teaspoon vanilla extract
2 tablespoons butter, softened
8 ounces cream cheese
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease a 15x10x1 inch baking pan and line with parchment paper. Grease and flour the paper.
In a large bowl, beat eggs on high for five minutes. Gradually add white sugar and pumpkin. Add flour, cinnamon, and baking soda. Spread batter evenly in pan. Sprinkle walnuts evenly on top.
Bake at 375 degrees F (190 degrees C) for 15 minutes or until cake springs back when lightly touched. Immediately turn out onto a linen towel dusted with confectioners sugar. Peel off paper and roll cake up in the towel, starting with the short end. Cool.
To Make Filling: Mix confectioners sugar, vanilla, butter or margarine, and cream cheese together till smooth.
Carefully unroll the cake. Spread filling over cake to within 1 inch of edges. Roll up again. Cover and chill until serving. Dust with additional confectioners' sugar, if desired.

Oreo Cheesecake Cups

Ingredients:
Vanilla Wafer cookies
2 (8 ounce) packages cream cheese, softened
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
crushed Oreo cookies (I scrape off the filling in the middle and just crush the cookie crumbs)

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Line muffin pans with cupcake
papers.
2. Place one wafer cookie in the bottom of each cupcake paper. In a medium
bowl, cream together cream cheese and sugar. Beat in eggs and vanilla until
smooth. Pour over wafers in cupcake papers.
3. Sprinkle Oreo crumbs over top
4. Bake in preheated oven 15 minutes (possibly a little longer), or until golden and set.

Miniature Cheesecakes

2 (8 oz.) pkg. Philadelphia cream cheese, softened
3 eggs
2/3 c. sugar
1 tsp. vanilla
20-24 vanilla wafers
Cherry pie filling

Beat together with electric mixer, first 4 ingredients, for 5 minutes. Place cupcake papers in tin. Place 1 vanilla wafer on bottom and fill 2/3 full. Bake for 15-20 minutes at 350 degrees. While still warm, put 1 teaspoon of cherry pie filling on top. Makes 20-24.

Pinto Beans with Kielbasa

Yield: 8 servings

1 large onion, chopped
1 medium green pepper, chopped
1 tablespoon olive or canola oil
1 1/2 pounds reduced fat turkey kielbasa, cut into 1 inch pieces
1 can (15.5 ounces) great northern beans, rinsed and drained
1 can (15.5 ounces) pinto beans, rinsed and drained
1 can (14.5 ounces) stewed tomatoes
1 can (10 ounces) diced tomatoes and green chilies
1 can ( 8 ounces) tomato sauce
1/2 teaspoon garlic powder
1/4 teaspoon pepper

In a Dutch oven, saute the onion and green pepper in oil until tender. Add the remaining ingredients; bring to a boil. Reduce heat; cover and simmer until heated through.
